Breakfast for Dinner Courgette Fritters
Over the weekend the fiancé and I had bought courgettes on the market and come last night we were unsure what to use them for. Then it came to us: fritters! If you’re unfamiliar with the term, fritters are like stuffed mini pancakes hence the title Breakfast for Dinner! Here is the recipe we used and adapted:
Yummy Courgette Fritters
- 140g plain flour
- 2 eggs
- 175ml milk
- 50g emmental cheese
- 2 courgettes
- 1 onion
- 1 tsp olive oil
1. Heat oven to 200°C/fan 180°C. Grate your courgettes as well as your cheese, and chop the onion up into small pieces.
2. In a bowl, stir the flour, eggs and milk until you have a smooth batter. Add in the grated cheese and 1/4 of your chopped onion.
3. In a non-stick frying pan, cook the courgettes and the remaining 3/4 of your onion over high heat, stirring for 3 to 4 mins until just soft. Then tip onto kitchen paper and squeeze dry (you may need several sheets of kitchen paper to do this). Add this to your batter.
4. Oil the frying pan, then use a ladle to drop in the amount of batter you want. Cook for a couple of minutes on each side until golden. Continue until you’ve used up all the batter, then transfer to a baking tray and finish in the oven for 8 minutes.
Super easy and quick to make, and delicious. We served these with salsa, which complemented them really well!
